A project that was years in the works, Lallemand had produced a special yeast that can sour beers in days instead of months or years. Not only that it produces alcohol along side the lactic acid, meaning your valuable fermentation equipment won’t get contaminated. The fermentation can be completed in as little as 10 days, while offering red apple, peach and honeydew notes with the sourness. Fermentation rates are slightly higher than a usual ale yeast with the optimal temperature range being 20-25°C (68-77°F).
